Another interesting Catalan food tradition I had the pleasure of trying was the calcot. The calcot is like an onion, but the Catalan tradition of eating the calcot is what makes it so unique. Calcots are served with the entire bulb fully attached and you eat them by peeling them apart with your hands. They are often barbecued or baked in the oven. They are often served with a signature dipping sauce made from nuts and other spices called Romesco sauce.. It sure is a messy food to eat, but they are delicious and using your hands to eat them makes for a very fun appetizer.
